Horisont, the restaurant on the 30th floor of the Swissotel in Tallinn represents the top level of European hotel restaurants, but besides its fancy food, hefty prices and fine service it is still very much defined as a hotel restaurant, says this article. It seems that the restaurant owners themselves are surprised at the popularity of the place. A couple of hours after opening, only one item from the menu’s fish dishes was still left. The kitchen is open from seven o’clock in the evening.
